SAUSAGE, POTATO & FONTINA FRITTATA

 
 

Ingredients:
» 12 ounces Premio Mild Italian Sausage, pre-cooked as per package directions and diced
» 12 eggs, whisked and at room temperature
» 1 1/2 cups potatoes, diced 1/2 inch and cooked
» 1 cup onions, sliced
» 1/2 cup roasted peppers or canned pimento (cut into one-inch squares)
» 2 cups grated fontina or mozzarella cheese
» 4 Tbsp. olive oil
» 2 cups marinara sauce, heated
» 4 Tbsp. chopped fresh herbs, such as parsely, chives and basil

 
 
 


Directions:
Preheat oven to 325 degrees
In large oven proof casserole or roasting pan, saute onions in 2 Tbsp. olive oil over load heat. When onions are soft, add potatoes and peppers. Toss together over high heat. Season well with salt and pepper. Add sausage and mix well. Add remaining olive oil and stir eggs in. Keep scraping and folding eggs into center from edges. Fold in cheese when eggs are about half cooked. Bake in oven 10-15 minutes until set. Remove and allow to cool 5 minutes and slice. Serve with tomato sauce and chopped herbs.

SENSATIONAL SLOPPY JOES

 
 

Ingredients:
» 1 pound ground beef or ground turkey
» 1 large onion
» 1 cup Heinz® Tomato Ketchup
» 1 Tbsp. Heinz® Worcestershire Sauce
» 1/4 cup water
» 1/4 tsp. salt
» 1/8 tsp. pepper
» 6 sandwich buns

Directions:

Brown the ground meat with the onion in a nonstick skillet, stirring until crumbly; drain. Stir in the Heinz® Tomato Ketchup, Heinz® Worcestershire Sauce, water, salt and pepper. Simmer for 12 to 15 minutes or to the desired degree of doneness, stirring occasionally. Serve in the sandwich buns.
